Description:

Latar Belakang: Pemanfaatan pangan lokal kacang bogor masih terbatas dan meningkatkan pemanfaatan ubi kayu. Masyarakat Indonesia dapat memperkaya produk olahan pangan dan mengurangi ketergantungan tepung terigu. Tujuan : Mengetahui daya terima pada produk cookies mocanut dengan tepung mocaf dan tepung kacang bogor. Metode Penelitian: Uji daya terima menggunakan Visual Analogue Scale menggunakan jenis panelis agak terlatih. Penelitian cookies mocanut menggunakan Rancangan Acak Lengkap (RAL), dengan jenis penelitian eksperimen. Dilakukan uji Proksimat karbohidrat (by difference) dan kalium. Setiap parameter selanjutnya, dilakukan uji statistik dengan Kruskal Wallis karena memiliki data terdistribusi tidak normal. Hasil : Produk terpilih pada sampel E3 dengan perlakuan tepung mocaf 50% dan tepung kacang bogor 50% yang paling disukai. Hasil analisis zat gizi, serat kasar dan kalium produk cookies mocanut E3 yaitu kadar air 7.14%, kadar abu 1.98%, lemak 33.92%, protein 6.27%, karbohidrat 50.69%, serat kasar 1%, dan kalium 337.39 mg/ 100 g. Kesimpulan : Ada pengaruh pada tepung mocaf dan tepung kacang bogor terhadap daya terima cookies.
