Ketersediaan kapasitas industri pengolahan biji kakao kurang optimal. Hal ini ditengarai oleh kapasitas produksi yang hanya sekitar 50% dari kapasitas terpasang. Keadaan demikian tidak diharapkan karena selain tidak mampu menyerap tenaga kerja, industri tersebut seharusnya mampu meningkatkan nilai tambah untuk dalam negeri dan mampu menjadi produsen atau pasar biji kakao dalam negeri (Mutakin dan Sihaloho, 2006).Berdasarkan permasalahan yang ada, maka peneltian ini dibuat dengan tujuan untuk mengetahui besarnya efisiensi industry cacao powder dengan menggunakan value stream mapping dan untuk mengetahui apakah nilai efisiensi tersebut sebagai penyebab tidak optimalnya penggunaan kapasitas pabrik.Berdasarkan hasil penelitian, dapat disimpulkan bahwa nilai efisiensi yang ada di industry cacao powder adalah sebesar 96%. Nilai efisiensi yang ada di industri cacao powder, bukan merupakan penyebab tidak optimalnya penggunaan kapasitas pabrik di industri cacao powder sehingga disarankan agar dapat dilakukan penelitian lanjutan untuk mengetahui penyebab tidak optimalnya penggunaan kapasitas industri cacao powder.

Cocoa processing capacity is not optimal. It is identified that the use of production capacity is only about 50% of the installed capacity. This is not expected because not able to provide employment. Industry should be able to increase the added value for the country and are able to produce the domestic cocoa beans (Mutakin dan Sihaloho, 2006). Based on existing problems, this research was made in order to determine the efficiency of industrial cacao powder by using value stream mapping and to determine whether the value of efficiency as the cause suboptimal use of plant capacity. Based on the results, it can be concluded that the value of efficiency in the industry cacao powder is 96%. Value efficiency in industrial cacao powder, not a cause of suboptimal capacity utilization in the industrial plant cacao powder so it is suggested that further research be done to determine the cause of the industrial capacity of cacao powder is not optimal.
