Nutritional adequacy is very important for toddlers� health, that�s why all toodler�health was related to their growth. The toddler period was called the "goldenage" in which the foundations of sensory, thinking, speaking, intensive mental andintellectual growth. In this period, the toodler need an alternative snack thatmade from nutritious local food such as catfish and spinach. In general, makingbread was used wheat flour that only contains macro nutrients and a few othernutrients. Through the addition of catfish and spinach was expected to increasethe nutritional value of the bread, especially protein and iron. To determined theeffect of adding catfish and spinach from pastry to the levels of protein, iron andacceptability of pastry. This study used an experimental design with completelyrandomized design (CRD). There was 4 different formulas of catfish and spinach.
Organoleptic assessment, proximate analysis test and iron levels of pastry hasbeen checked. The results of the panelist acceptance level and the most preferredorganoleptic characteristics were formula F1. Whereas the protein and ironcontent of F1 includes 12.78 g and 12.93 mg. This research shows that theaddition of catfish and spinach to bread dough, the higher value of protein and
iron. Pastry with the addition of catfish and spinach that contains of protein andiron was suitable for toodlers� as their alternative snack.
