The availability of smooth breastfeeding will help the success of exclusive breastfeeding
for breastfeeding mothers for 6 months. Breast milk content can be affected by food intake
and nutritional status. The intake of food macro nutrients needs to be increased during
breastfeeding, besides that it must be supported by consuming foods that can increase
breast milk because during breastfeeding mothers need more energy intake for recovery
after childbirth and the metabolic processes of breast milk formation. Objective: To
analyze differences in acceptability (color, aroma, taste, texture) and the nutritional
content of lunkhead with the addition of mung bean puree, soybean puree, and red dragon
fruit from various formulas. This type of research is an experimental study with 4
formulations: F0, F1, F2, F3. The nutritional value test carried out was the proximate.
The acceptance test used the Visual Analog Scale with 30 consumer panelists. The
statistical tests used were One Way Anova (95% CI) and Duncan s test. Results of the
nutritional value and preference level of the selected consumer panelists were
formulation (F3) with a fat of 6.56 g, a moisture content of 16.7 g, a crude fiber of 0.9 g,
71.5 g carbohydrates, 4.56 g protein, ash content of 0.61 g, and energy 363.3 g. There is
an effect of adding mung bean puree, soybean puree, and red dragon fruit with
acceptance on the parameters of taste, color, aroma and texture and nutritional.
