The production of snake fruit podoh from year to year has increased. Many processed from the fruit of snake fruit of course seeds produced only being waste.So that the seeds of snake fruit that is waste but has any nutrition are numerous and having the benefit for the body to be processed into a drink which is useful. Objective: The effect of extraction time on the quality of instant powdered snake fruit seeds and acceptance of the public against the organoleptic quality. Method: This is a research experiment , the snake fruit seeds powder in the extraction by the time the extraction of 5 minutes , 10 minutes , and 15 minutes. Product testing conducted by the organoleptic test by 30 panelists somewhat trained students test Esa Unggul University using Visual Analog Scale (VAS). Statistical tests using One Way ANOVA. Result: The time of the extraction of having significant with organoleptik to the criteria of taste and preference level with p <α (0.00 <0.05), but the extraction time has no significant to the color, consistency, and flavor. Test levels of quality and the most excellent A level is sampled to 1 with extraction time of 5 minutes, the water content of 3.76%, 7.82% ash content, ash kealkalian 1.16% and the level of preference with a mean of 4.20. Conclusion: Extraction time influence the organoleptic quality standards and instant powdered snake fruit seeds. Expected further research on snake fruit seed instant drinks that focuses on the mineral content present in the snake fruit seed.
