Description:
Biji nangka jarang di ekplorasi padahal biji nangka memilki kandungan gizi yang baik dan potensi aktivitas antioksidan. Menurut Gupta, biji nangka merupakan sumber gizi yang baik dan memiliki komponen antioksidan yang berpotensial dan dapat digunakan dalam pengembangan pangan fungsional. Tujuan dari penelitan ini adalah (1) mengetahui karakteristik amilum biji nangka (Artocarpus heterophyllus Lamk), (2) mengetahui kadar air, kadar abu dan kandungan senyawa fitokimia biji nangka (Artocarpus heterophyllus Lamk), mengetahui aktivitas antioksidan dengan metode DPPH menggunakan pelarut etanol 96%. Amilum biji nangka yang telah diisolasi mengandung amilosa dan amilopektin dengan kadar air 8,01% dan kadar abu 3,34%. Biji nangka positif mengandung senyawa kimia seperti flavonoid, saponin dan steroid. Berdasarkan penelitian diperoleh Nilai IC50 biji nangka sebesar 514,77 ppm, bila dibandingkan dengan nilai IC50 Vitamin C 3,359 ppm dapat disimpulkan bahwa biji nangka memeiliki aktivitas antioksidan 153 kali lebih lemah dibanding vitamin C.
