Description:

Hasil penelitian menunjukan bahwa biskuit berbahan dasar kulit pisang dan ubi jalar merah memenuhi standar SNI untuk MP-ASI sehingga dapat direkomendasikan untuk makanan bayi usia 6-24 bulan, tetapi harus diperhatikan suhu penyimpanan, pengolahan, dan pengemasan agar mampu memenuhi syarat kemanan makanannya. Selain itu, perlu ada penelitian lanjutan menggunakan teknologi yang lebih baik dalampembuatan tepung pisang seperti freeze drying untuk mengoptimalkan zat gizi yang tersedia dalam kulit pisang.
