STUDI PEMBUATAN COKELAT DENGAN PENAMBAHAN DAUN KELOR (MORINGA OLEIFERA) DAN KURMA (PHOENIX DACTYLIFERA) PADA ATLET ENDURANCE

Description:

Latar Belakang : Pada periode pertandingan, penyediaan makanan harus memenuhi kuantitas dan kualitas gizi yaitu jumlah energi dan komposisi gizi seimbang. Kurma mengandung karbohidrat tinggi dengan indeks glikemik rendah. Daun kelor mengandung kalsium tinggi. Sehingga dibuat snack berbasis pangan lokal yang tinggi energi dan kalsium bagi atlet. Tujuan : Mengetahui studi pembuatan cokelat dengan penambahan daun kelor (Moringa Oleifera) dan kurma (Phoenix dactylifera) pada atlet endurance. Metode : Jenis penelitian ini adalah Rancangan Acak Lengkap (RAL), analisis statistik One Way Anova, dan daya terima menggunakan uji organoleptik. Didapatkan hasil 4 formulasi dengan perbandingan cokelat, tepung daun kelor, dan buah kurma pada F0 60 g : 0 g : 0 g, F1 40 g : 5 g : 15 g, F2 40 g : 10 g : 10 g, F3 40 g : 15 g : 5 g. Hasil Penelitian : Hasil penelitian produk terpilih cokelat dengan penambahan kelor dan kurma adalah formulasi F1 (40 g : 5 g : 15 g). kandungan gizi formulasi F1 air 3.27�0.02%, abu 1.83�0.02%, lemak 30.4�0.00%, protein 5.32�0.00%, karbohidrat 59.1�0.04%, serat kasar 0.33�0.00%, kalsium 427.07�0.09%, dan angka lempeng total (ALT) 1.1 x 106. Kesimpulan : Ada pengaruh penambahan kelor dan kurma terhadap kandungan gizi serta terdapat perbedaan yang signifikan antara keempat formulasi pada hasil uji hedonik dan uji mutu hedonik dengan parameter warna, tekstur, aroma, rasa
