Description:

Latar Belakang: Stress oksidatif akibat radikal bebas dapat memicu timbulnya penyakit-penyakit degeneratif seperti penyakit kardiovaskular. Untuk mencegah hal tersebut, tubuh memerlukan makanan yang tinggi akan antioksidan. Tujuan: Menganalisis aktivitas antioksidan, kandungan gizi serta penilaian organoleptik marmalade dengan penambahan wortel. Metode: Jenis penelitian ini adalah penelitian eksperimen dengan lima formulasi pembuatan marmalade dengan penambahan wortel yaitu 0 g, 25 g, 50 g, 75 g dan 100 g. Penilaian organoleptik dilakukan menggunakan instrumen Visual Analog Scale (VAS): identifikasi aktivitas antioksidan dengan metode DPPH: analisis kandungan gizi dengan analisis proksimat. Hasil Penelitian: Hasil penelitian menunjukkan formulasi F4 (100 g jeruk : 75 g wortel) memiliki tingkat penerimaan yang disukai dan karakteristik yang diinginkan, aktivitas antioksidan dengan nilai IC50 17.95 ppm serta kandungan gizi untuk kadar air 21.83�0.19%, kadar abu 0.48�0.00%, kadar protein 3.21�0.00%, kadar lemak <0.02%, kadar karbohidrat 74.48�0.20% serta kadar serat berkisar 1.44�0.07%. Kesimpulan: Penelitian ini menunjukkan semakin banyak penambahan wortel pada marmalade semakin kuat aktivitas antioksidannya dan berpengaruh secara signifikan (p ≤ 0.05) pada kandungan zat gizi serta penilaian organoleptik (uji hedonik: tekstur dan mutu hedonik: warna, rasa serta tekstur) tetapi tidak berpengaruh secara signifikan (P > 0.05) pada uji hedonik: warna, aroma, rasa serta keseluruhan dan mutu hedonik: aroma dan keseluruhan. Pada penelitian selanjutnya disarankan untuk menganalisis kandungan beta karoten dan vitamin C.
