Description:

Latar Belakang: Tidak semua masyarakat dapat mengonsumsi susu hewani. Adanya kandungan laktosa dan kasein dapat memperparah gejala klinis pada penderita autis dan laktosa intoleran. Selain kasein, diet rendah gluten dapat diberikan pada penderita autis dan celiac disease. Sehingga perlu adanya susu alternatif pengganti susu hewani yaitu susu kedelai tanpa laktosa dan kasein serta penambahan serealia rendah gluten. Tujuan: Menganalisis kandungan karbohidrat, protein, lemak, kadar air, kadar abu dan viskositas serta penilaian organoleptik pada produk susu kedelai dengan penambahan jewawut. Metode: Jenis penelitian ini adalah penelitian eksperimen, dengan desain penelitian rancangan acak lengkap. Analisis secara statistik menggunakan uji One Way Anova dan dilanjutkan dengan uji beda, uji Duncan�s Multiple Range Test pada α = 5%. Panelis dalam penelitian ini yaitu panelis agak terlatih yang diambil dari mahasiswa Program Studi Ilmu Gizi Universitas Esa Unggul sebanyak 25 orang. Hasil Penelitian: Berdasarkan hasil penelitian, produk terpilih berdasarkan penilaian organoleptik yang banyak disukai adalah produk susu kedelai dengan penambahan jewawut pada formulasi F1 (180 ml : 20 g), dengan kandungan karbohidrat yaitu 5.60 � 2.14, protein 1.43 � 0.02, lemak 0.68 � 0.01, air 91.63 � 2.14, abu 0.66 � 0.01, kalsium 15.60 mg dan kandungan energi 34 � 8.60, serta nilai viskositas 1.27 � 0.02. Kesimpulan: Penelitian ini menunjukkan bahwa penambahan jewawut pada susu kedelai berpengaruh terhadap kandungan karbohidrat, kandungan protein, kandungan lemak, kadar air, kadar abu, kandungan kalsium, kandungan energi, viskositas, dan uji hedonik (tingkat penerimaan) serta mutu hedonik (karakteristik organoleptik) pada produk minuman berbahan dasar susu kedelai dengan penambahan jewawut.
